Tokyo is trying out a different form of farming - vertical farms are indoor farms where fruits and vegetables are stacked vertically. The temperature and humidity in these farms can be fine-tuned for the most optimal growing conditions. Due to the fact that these farms are indoors, evaporated water can also be recycled in these systems. Tokyo is one of many cities today with a lack of farmland, vertical farms are thought to be a key strategy in ensuring that it remains reasonably self-sustainable and uses space effectively. Yields per square metre are over 50 times more than in traditional farming and vertical farms can take all manner of sizes.
